Grown in the highlands of the Copán region in Honduras, this decaf coffee exemplifies the rich heritage and dedication of Honduran coffee farmers. Cultivated at elevations reaching 1,500 meters above sea level, the beans are primarily of the Bourbon and Catuai varieties, known for their balanced and nuanced flavor profiles. With a medium roast, this coffee offers notes of semi-sweet chocolate, cashews, and macadamia nuts that results in a smooth and satisfying cup.

Region: The Copán region, situated in western Honduras, is renowned for its fertile soils and favorable microclimates, making it an ideal environment for producing high-quality coffee. The area's rich cultural history and commitment to sustainable farming practices contribute to the exceptional quality of its coffee beans.

Producer: Cafés Especiales Corquín (CAFESCOR S.A.) is a cooperative based in Corquín, Copán, Honduras, uniting over 440 smallholder farmers, including 84 women owned farms, to produce high-quality coffee. With certifications like USDA Organic, Fair Trade, and Rainforest Alliance, CAFESCOR ensures ethical and environmentally friendly production. Beyond coffee, the cooperative invests in social initiatives, empowering women, supporting youth programs, and improving education and recreation opportunities in its communities.

Process: This coffee utilized a fully washed and sun-dried process. Ripe cherries are hand-picked and depulped to remove the outer skin. The beans are then fermented to dissolve the mucilage, washed, and finally sun-dried on raised beds. This traditional method enhances the coffee's clarity and brightness, resulting in a clean, sweet, and vibrant cup.

Decaffeination: Utilizing the Mountain Water Process, a chemical-free decaffeination method, caffeine is gently removed from the beans while preserving their inherent flavor compounds. This process involves soaking the green coffee beans in pure mountain water from Pico de Orizaba, Mexico's highest peak, to extract caffeine, followed by filtration to remove the caffeine from the water. The flavor-rich water is then reintroduced to the beans to be reabsorbed, ensuring that the original taste profile remains intact. The result is a 99.9% caffeine-free coffee that retains its full-bodied flavor and aroma.

Certification: Fair Trade (FT FLO/USA), Organic. By choosing this coffee, you support fair wages and environmentally friendly cultivation methods.

The roast has a beautiful aroma and perfectly balanced flavor of chocolate, cashews, and hazelnuts. Selfsame has me smiling all day long. I can enjoy my coffee in the afternoon, without worrying about the caffeine bolt.

Tastes like an amazing, regional, small batch roasted coffee. Very special!

Started when I opened the bag and caught a whiff. I have never smelled a decaf like this, or maybe even a regular bean. The taste is nuanced, well-balanced and just a really beautiful cup of coffee. What a treat for decaf drinkers, or those like me, who can't drink caffeinated all day without the jitters. Highly recommend! It's actually worth the price to treat myself because I really love coffee!
