Grown in the highlands of Chiapas, Mexico, at elevations of 1,200 to 1,800 meters above sea level, this decaffeinated coffee showcases the dedication of smallholder farmers who cultivate their beans in fertile volcanic soils under ideal tropical conditions. Drawing out the development phase of this medium roast results in a coffee with vibrant notes of ripe lemon, sweet almond, a touch of cinnamon spice. Its balanced acidity and smooth, lingering finish make it a delightful choice any time of day.
Region: The Chiapas region, located in southern Mexico, is known for its fertile volcanic soils, high altitudes, and consistent rainfall, making it an ideal environment for coffee cultivation. Plants were originally brought to Chiapas in 1847.
Producer: This coffee is produced by smallholder farmers, 44% of whom are indigenous. 95% of Mexicos coffee farmers are smallholders, growing on lots of less than three hectares with a focus on shade grown, organic certified crops.
Process: This coffee underwent a traditional washed and patio dried process, where ripe cherries are first picked, depulped, and fermented for 12 to 17 hours. Following fermentation, the beans are thoroughly washed and sun-dried on patios.
Decaffeination: Utilizing the Mountain Water Process, a chemical-free decaffeination method, caffeine is gently removed from the beans while preserving their inherent flavor compounds. This process involves soaking the green coffee beans in pure mountain water from Pico de Orizaba, Mexico's highest peak, to extract caffeine, followed by filtration to remove the caffeine from the water. The flavor-rich water is then reintroduced to the beans to be reabsorbed, ensuring that the original taste profile remains intact. The result is a 99.9% caffeine-free coffee that retains its full-bodied flavor and aroma.

Our packaging is intentionally designed to be composted. The bag, including the degassing valve, are comprised of PLA and are 100% compostable. The box can be composted or recycled (please remove the label prior to composting).

I did not realize just how bad the decaf coffee we were used to drinking. We gave up caffeine years ago and apparently flavor! The selfsame coffee is outstanding! I no longer need milk as I’m enjoying the taste of the coffee so much. Highly recommend giving this a try. You will be glad you did!
